A recent guest brought it to my attention that I should share my ingredient philosophy more with guests, so here goes…At Ellerslie I try to use the best locally sourced ingredients, organically raised if possible. That means the eggs come from my own backyard flock, the sausages are made locally with locally raised pork, the strawberries are from my strawberry patch, raspberries and blackberries also, the spinach in the roulade from the garden, and the honey on your yogurt from my hardworking bee hive. Bread, muffins, scones, etc are handmade from scratch each day. Jams and jellies are all handmade from local berries and fruit. The smoked salmon that tops the potato pancakes is caught by a fisher friend and smoked in Nanaimo. That’s also why if I’m not in the house when you arrive, you can usually find me toiling in the upper vegetable and fruit garden. Come have a look!
